Ghraiba
With almonds and olive oil
Ghraiba kneaded with organic whole-grain wheat flour, sweetened with organic cane sugar, with olive oil in place of ghee. Ghraiba is at heart a crumbly almond biscuit, and this one stays true to that: almonds to hold the texture, and ingredients you can count on one hand. Each piece is shaped one by one and set in its own paper inside a box that opens before a guest, with the dallah.

Wheat and dates
Two staples the old household stored, and nothing besides: what comes down from the palm, and what is reaped from the field. This Ghraiba comes from the wheat; the rest of the shop comes from the palm.

Older than the recipe
Ghraiba is a crumbly biscuit whose origin is ground almond, and a recipe close to it is written in the oldest Arabic cookbook to reach us, from the tenth century CE. Even its name is disputed: some say Turkish, some Arabic, some Persian, and no one has settled on an answer.

Named together
Dates and wheat never part in what the ancients said about provisions: they are counted together whenever the staples are counted, and stored together in the same house. Setting Ghraiba beside dates is not a way of arranging a tray, but bringing the two staples together in their place. And in Arabic, burr and birr are written alike: wheat that is stored, and the kindness shown to a guest.

What we changed
The familiar Ghraiba is ghee, sugar and white flour. This one is olive oil instead of ghee, organic whole-grain wheat flour instead of white, and organic cane sugar in moderation — there is sugar in it, and we say so as it is — with almonds to hold it together. Ingredients you can count on one hand, and a taste unlike ghee Ghraiba.
