“Luxury” is a word that means nothing. This one means something.
In the dates market, everything is “luxury” and “first grade”. We write down the four standards we sort by, and sell each grade under its own name.
- The largest fruit
- Fully twisted
- Perfectly even colour
- The very top of the sorting

- 1
Picking
The whole bunch is picked before dawn, and never mixed with a bunch from another palm.
- 2
First sifting
The fruit is taken off the strands by hand, and anything cracked or over-dried is set aside.
- 3
Sorting fruit by fruit
On the table, four things are measured: size, evenness of the twist, colour, and how well the skin holds to the flesh.
- 4
Weighing and stamping
Each grade is weighed and stamped with its production date and its grade before it goes into the cold.

Words we do not use
Half the deception in the dates market is in the language. These are our commitments in writing.
